Main Ingredients
 1 medium-sized butternut squash
 200 g quinoa
 1 onion
 2 cloves garlic
 200 ml vegetable broth
100 g grated cheese (such as Gruyère or cheddar)
 2 tablespoons of olive oil
 Salt and pepper to taste
Directions
1

Preparation: Preheat your oven to 180°C (350°F). Peel and dice the butternut squash into small cubes. Rinse the quinoa under cold water.

2

Sautéing: In a large ovenproof skillet or casserole dish, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until translucent.

3

Combining Ingredients: Add the diced butternut squash to the skillet, cooking for about 5 minutes. Stir in the rinsed quinoa, ensuring it's well mixed with the vegetables

4

Adding Broth: Pour in the vegetable broth, season with salt and pepper, and bring the mixture to a simmer.

5

Baking: Sprinkle the grated cheese evenly over the top. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the top is golden and the squash is tender

6

Serving: Remove from the oven and let it cool slightly before serving. Enjoy your meal directly from the skillet, reducing the number of dishes used.
